I know oats are nothing to get excited about, but you can make them a lot more exciting and delicious. Add in warm spices, sweet or tart fruits and a few nuts and seeds for the crunch. Add a drizzle of honey or maple syrup and finish it with almond milk to make it creamy! 

This instant pot steel cut oats recipe isn’t just for a vegan breakfast. It’s filling and wholesome and can be eaten as lunch or dinner too! And there is nothing better than a bowl of oatmeal that is vegan and gluten free!

All my oatmeal recipes contain cinnamon, maple syrup, cardamom and almond milk. These are all the flavour boosters that go into all my oatmeals. Rest of the ingredients you can add according to what you have in hand or depending on the flavours that you want.

How to make the best Vegan Banana Peanutbutter Oatmeal 

Oats – Any type of oats can be used for this recipe. Lately I have been using steel cut oats because they are healthier to have than regular rolled oats. But you can use quick oats and cook them according to the instructions on the package. 

Spices – Cinnamon and cardamom are two of my favourite spices. They add warmth to the dish and come with a lot of health benefits. Not to forget they will add lots of flavour to your oatmeal! 

Sweetener – Pure maple syrup or honey, brown sugar, coconut sugar or white sugar are a few options that you can choose from. I personally use honey majority of the time as it has miraculous healing properties. 

Liquid – For the milk in this oatmeal recipe I have used almond milk. Feel free to use any flavour plant based milk that you like. I prefer using plant based milk as they are low in calories, fat and loaded with vitamins and minerals (more than dairy milk!), such as calcium, B-12, vitamin E and vitamin D. 

Seeds and Nuts – The addition of nuts and seeds is completely optional. But many nuts and seeds contain a lot of protein, essential omegas that are healthy for your heart so adding a handful won’t do any harm. Instead it will add crunch to your oatmeal. I have used almonds, walnuts, pumpkin seeds, flax seeds and sunflower seeds. 

Oatmeal is definitely my favourite go-to meal! It’s hearty, healthy and delicious!

Ingredients

  • 1/2 cup steel cut oats

  • 1 1/2 cups almond milk

  • 2 tsp honey

  • 1/2 banana mashed well

  • Peanutbutter Banana Topping
  • 1/4 tsp honey

  • 1/4 tsp vanilla extract

  • 1 tbsp crunchy peanut butter, plus more for topping

  • 1/2 tsp chopped nuts

  • 1/2 banana sliced, for topping

  • Instant Pot or Cooker pressure

Directions

  • In the cooker pressure add the mashed bananas, oats and the almond milk. Secure the lid.
  • Cook the oats on medium heat for about 5-8 minutes. Af†er the oats finish cooking, allow the pressure to release naturally.
  • After the pressure releases, open the lid add the vanilla extract and stir it well. The extra liquid will be absorbed once it cools down.
  • Stir in the honey and the peanut butter. Divide equally into bowl and top with nuts, sliced bananas an d other toppings if desired.

These delicious sweet Strawberry Rolls with Cream Cheese Icing are dreamy rolls that are paired perfectly with a hot cup of coffee to make your breakfast scrumptious and sweet! 

Can you imagine a cinnamon roll with a strawberry glaze and strawberry jam on the inside when you take a bite? Life cannot get better than this! Oh wait, it does! How can one forget the rich cream cream cheese icing drizzled all over the rolls. The cream cheese icing takes the strawberry rolls to the next level, making it the perfect glaze for these delicious Rolls. 

Strawberry Rolls are filled with strawberry reduction and fresh strawberries. Roll them up, cut them and let them rise until doubled in size. Bake them and drizzle the rolls with cream cheese icing while still warm for the most delicious Strawberry Rolls!

Why Strawberry Rolls?

I have been wanting to make these Strawberry Rolls for a very long time now. But as fresh strawberries were not available I thought of making them later when I can get hold of fresh berries. But one day a friend of mine messaged me asking, if I would like to try a few dishes using frozen berries? Trust me the berries she sent were truly out of this world! They were not only as good as fresh berries but even better! Sweet, juicy and not only tasted delicious they even had the smell of fresh juicy berries to them! If you are missing fresh berries just like me, don’t worry! Simply contact them uvberries and fulfil your craving of fresh hand picked berries!

So today was the perfect day to make these rolls. I love cinnamon rolls, but wanted to give them a summery twist. So I decided to make Strawberry Rolls. 

Ingredients in Strawberry Rolls with Cream Cheese Icing

For the dough you will need 

  • Dry Ingredients – flour, salt and sugar
  • Wet Ingredients – milk, butter and egg
  • Yeast – I have used instant yeast, but you can also use dry active yeast. But keep in mind that it needs to be activated. 

For the filling you will need

  • Berries – freshly cut strawberries
  • Jam – I have used freshly made strawberry jam, to make sure the flavour is carried through. 

For the cream cheese icing you will need

  • Cream Cheese – Make sure the cheese is at room temperature. My favourite brand to use is Philadelphia Cream Cheese but you can also use low fat cream cheese.
  • Sugar – Best to use powdered sugar as it will assure you a smooth texture instead of a grainy texture. 
  • Butter – We have to use unsalted butter to control the salt content in the recipe. 

Tip for making the best rolls

  • Make sure the milk is not too hot, else it could kill the yeast.
  • Always check the expiration date of the yeast.
  • If you do not have a warm place for the dough to rise, Heat your oven to 180 C degrees for 5 minutes then turn it off and place the rolls inside.
  • Don’t put too much jam inside as it will leak out from the sides.

Ingredients

  • Dough
  • 1/2 cup milk

  • 1 egg

  • 1/4 cup butter

  • 1/4 cup granulated sugar

  • 2 cups flour

  • 1/4 tsp salt

  • Filling
  • 1 cup fresh strawberries

  • 3/4 cup strawberry jam

  • Cream Cheese Icing
  • 1/2 cup cream cheese

  • 1 tsp vanilla essence

  • 2 tbsp butter

  • 1 cup powdered sugar

  • Strawberry jam
  • 2 cups strawberry

  • juice of 1 lemon

  • 1/2 cup powdered sugar

Directions

  • To activate the yeast, warm the milk in the mircowave for 30 seconds. Add yeast to it, stir it and let it rest for 5 minutes.
  • In a large bowl mix the flour, egg, sugar, butter and the yeast and milk mixture and knead it into a dough. The dough should be soft and elastic. Place the dough in a large slightly oiled bowl, cover it with plastic wrap and let it rise in a warm place until double in size. About 1-2 hours.
  • In the mean time make the strawberry jam. For the jam, heat a nonstick pan and add all the jam ingredients in to it. Bring to a boil and let it simmer for about 30 minutes or until of the desired consistency. You can also use ready made jam.
  • Butter a 10 inch baking dish and preheat the oven at 180 C degrees.
  • Roll the dough into a rectangle about 18×12 inches and spread the jam all across it. Make sure you dont use too much otherwise it will leak from the sides. Evenly arrange the freshly cut strawberries over this.
  • Start rolling the dough gently and when you reach the end make sure you pinch the sides together.
  • Cut the roll into 6 equal rolls and place the rolls in the baking dish and bake until golden brown and cooked.
  • In the meantime you can make the cream cheese icing. In a large blender add all the ingredients for the icing and blend it together. If the icing is too thick add a little milk until the desired consistency is achieved. You shouldnt need more than 1-2tbsp milk.
  • Once the rolls are ready, let them cool for 10 minutes then drizzle with cream cheese icing and serve!

Let me warn you, if you have a sweet tooth or if you lack self control around food, you should stop reading this article right now! Because these Nutella French Toast Rolls with Cinnamon Sugar are truly irresistible.

These Nutella French Toast Rolls with Cinnamon Sugar are fun, finger friendly treats and are loaded with flavours! 

Sandwich bread smothered in Nutella, dipped in egg and fried in butter, these crisp and golden rolls are then rolled in cinnamon sugar. These Nutella rolls make for a perfect breakfast or even a decadent chocolate dessert. 

Who doesn’t want to enjoy a dessert for breakfast, that too with just a handful of ingredients that you can easily whip up in 15 minutes! I know it’s tempting to go out for a luxurious breakfast or brunch on the weekend, but why not stay in and try these?

Ingredients

All you need are a few common ingredients that you already have at home to make this delicious treat! I prefer using white sandwich bread for this recipe but you can also use brown or multigrain bread. If not Nutella, you could also use Hershey’s Chocolate Spread or any nut butter that you like to give it a healthy twist! How to make the Nutella French Toast Rolls

  • The process is super simple, the entire recipe takes 15 minutes to make these delicious Nutella rolls. First, simply cut the crust of each slice of bread. Take a rolling pin and flatten the bread slices. Soft bread works the best for this! 
  • Spread each slice of bread with a layer of Nutella or nut butter. Most importantly, control the urge to eat the Nutella as it is. Now tightly roll each slice carefully. 
  • In a small bowl, whisk the eggs, milk and vanilla extract. In a separate bowl mix the sugar and the cinnamon powder. 
  • Dip each bread roll in the egg mixture, don’t soak up too much of the liquid. Now sauté each roll in butter until golden brown and crispy. Remove from the pan and roll each bread roll in the cinnamon sugar.
